Squash Casserole
Ingredients
- 1 onion
- 1 bell pepper
- 1 stick of butter
- 1 pkg. Tasso
- 7-9 squash (smaller ones so you do not have the big seeds)
- 1 lb. shrimp
- 15 oz breadcrumbs
- ½ pint whipping cream
- 8 oz bag Velveeta crumbles
Instructions
- Sauté onion and bell pepper in the stick of butter.
- Add the package of Tasso and cook for about 15–20 minutes.
- Add squash, cover, and let cook down for about 20 minutes. Then uncover and let some of the juices cook out.
- Add shrimp and cook until they turn pink (about 10 minutes).
- Add about ¾ of the breadcrumbs, ½ pint whipping cream, and ½ of the Velveeta crumbles. Mix well.
- Pour into a baking dish. Top with remaining breadcrumbs and the rest of the Velveeta crumbles.
- Bake at 350°F for 20 minutes.
