Mexican Cornbread
Ingredients
- 1 cup cornmeal
- ½ tsp. baking soda
- 1 cup flour
- ¾ tsp. salt
- 2 eggs
- 1 can cream corn
- 1 cup milk
- ½ cup oil
- 1 large onion, chopped
- ½ lb. ground beef
- Jalapeño peppers (to taste)
- Grated cheese (to taste)
Instructions
- Brown meat with onions. Season to taste.
- Mix together cornmeal, flour, salt, baking soda, eggs, oil, milk, and cream corn.
- Grease pan, then add ½ of the cornmeal mixture.
- Top with beef, cheese, and jalapeño peppers.
- Add remaining cornmeal mixture to cover the beef.
- Bake 45–50 minutes at 350°F.
