Baked Potato Soup

Serves: 10 (can be scaled)

Ingredients

  • 6 large potatoes
  • ½ stick butter
  • ½ cup flour
  • 6 cups milk
  • 1 bunch green onions, chopped
  • ½ package bacon, cooked and crumbled
  • 1½ cups grated cheese
  • 1 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Bake potatoes, cool, and cut into cubes.
  2. Melt butter and add flour. Whisk in 1 cup milk.
  3. In a large pot, warm the remaining milk. Add the flour mixture, then potatoes, green onions, and bacon.
  4. Heat almost to a simmer, then reduce to low.
  5. Add cheese and sour cream. Season with salt and pepper.
  6. Stir until cheese melts and serve.

Notes: Original recipe from Austin American-Statesman. Can adjust ingredients (e.g., use 5 cups 2% milk, 4 potatoes, 4 strips thick bacon, omit green onions if preferred).
