Mexican Cornbread

Ingredients

  • 1 cup cornmeal
  • ½ tsp. baking soda
  • 1 cup flour
  • ¾ tsp. salt
  • 2 eggs
  • 1 can cream corn
  • 1 cup milk
  • ½ cup oil
  • 1 large onion, chopped
  • ½ lb. ground beef
  • Jalapeño peppers (to taste)
  • Grated cheese (to taste)

Instructions

  1. Brown meat with onions. Season to taste.
  2. Mix together cornmeal, flour, salt, baking soda, eggs, oil, milk, and cream corn.
  3. Grease pan, then add ½ of the cornmeal mixture.
  4. Top with beef, cheese, and jalapeño peppers.
  5. Add remaining cornmeal mixture to cover the beef.
  6. Bake 45–50 minutes at 350°F.
