Squash Casserole

Ingredients

  • 1 onion
  • 1 bell pepper
  • 1 stick of butter
  • 1 pkg. Tasso
  • 7-9 squash (smaller ones so you do not have the big seeds)
  • 1 lb. shrimp
  • 15 oz breadcrumbs
  • ½ pint whipping cream
  • 8 oz bag Velveeta crumbles

Instructions

  1. Sauté onion and bell pepper in the stick of butter.
  2. Add the package of Tasso and cook for about 15–20 minutes.
  3. Add squash, cover, and let cook down for about 20 minutes. Then uncover and let some of the juices cook out.
  4. Add shrimp and cook until they turn pink (about 10 minutes).
  5. Add about ¾ of the breadcrumbs, ½ pint whipping cream, and ½ of the Velveeta crumbles. Mix well.
  6. Pour into a baking dish. Top with remaining breadcrumbs and the rest of the Velveeta crumbles.
  7. Bake at 350°F for 20 minutes.
